Apple-Cucumber Soup / Amuse Bouche

Ingredients
- 1 apple granny smith or other sour type
- 100 gr. cucumber 3.5 oz.
- 125 gr. full fat greek style yogurt 4.4 oz.
- 1 shallot
- Extra virgin olive oil
- 2-3 ice cubes depending on size
- Tabasco

Instructions
- Peel the apple and the cucumber and cut them into small pieces and put them in a bowl.
- Cut the shallot into small pieces and them to the apple and the cucumber.
- Add the yoghurt, ice cubes en 1 TBSP of olive oil.
- Use a (hand) blender to mix all the ingredients together until you have a mixture with a smooth texture.
- Serve in small glasses and add 1-2 drops of Tabasco on top.
- If you are not serving it right away, store in a fridge until you do.
Recipe Notes
Tip: Don’t like Tabasco? No problem, just leave it out and add some leaves of fresh mint instead!
