Beef Carpaccio and Parmesan Cheese Brochettes

Ingredients
- 12 slices beef carpaccio
- 150 gr. Parmesan cheese 5 oz. (Nor grated, in one piece!)
- Fresh basil
- Extra virgin olive oil
- 1 lemon
- Black Pepper
- Skewers

Instructions
- Cut the lemon in half.
- Cut the parmesan cheese into slices thick enough so that they don’t break when skewered.
- Skewer the 1 slice of beef carpaccio and parmesan cheese and add 1-2 smaller leaves of fresh basil.
- The cheese will most likely break, so it helps to if you use the carpaccio as an “envelope” around the parmesan. That way, it holds it in place even if it breaks.
- Sprinkle the skewers with some drops of olive oil and the lemon juice.
Recipe Notes
Tip: Don’t have parmesan? You can also use another kind of hard cheese such as pecorino or manchego. You can also replace the carpaccio with ham.
