Carrot Brochettes

- 2 large carrots you can also use different coloured ones
- Fresh Parsley
- Fresh basil
- Extra virgin olive oil
- 1 lemon
- Coarse Sea Salt
- Black Pepper

Instructions
- Wash the carrots and cut them lengthways into thin slices. Its easiest to use a slicer.
- Blanche the carrots in boiling water for about 1 minute.
- Cut the parsley and basil and mix with 2 Tbsp of olive oil.
- Skewer the carrots in such a way that they look like an accordion.
- Sprinkle the oil/herbs mix onto them as well as some black pepper and sea salt.
- Cut the lemon in half and squeeze it out over the carrots.
Recipe Notes
Tip: you can use different herbs for a different taste. For example, coriander and mint are also a surprising combination!
