Gorgonzola – Pear Spread / Dip

- 2 pears
- 150 gr Gorgonzola 5.5 oz.
- 2 shallots
- 2 TBSP pine nuts
- Extra virgin olive oil
- Salt
- Black Pepper

Instructions
- Remove the skin from the pears and dice them.
- Slice the shallots into thin pieces.
- Dice the Gorgonzola.
- In a pan on medium heat, add 2-3 Tbsp of olive oil and lightly bake the shallots until they become clear.
- As soon as this is the case, add the pears and some salt and pepper.
- Let it simmer for about 10 minutes.
- Stir frequently to prevent burning.
- Remove the pan after about 10 minutes and let it cool down, transferring its contents to a bowl.
- While still warm, add the pine nuts and the Gorgonzola.
- Mix it with a fork and slightly crush the pieces of Gorgonzola while you are mixing.
- Put the mixture in the refrigerator and serve cool with toast or fresh bread.

Tip: also tastes great when you add this mixture to your salads!
