Gorgonzola – Pear Spread / Dip
Extra virgin olive oil
Remove the skin from the pears and dice them.
Slice the shallots into thin pieces.
Dice the Gorgonzola.
In a pan on medium heat, add 2-3 Tbsp of olive oil and lightly bake the shallots until they become clear.
As soon as this is the case, add the pears and some salt and pepper.
Let it simmer for about 10 minutes.
Stir frequently to prevent burning.
Remove the pan after about 10 minutes and let it cool down, transferring its contents to a bowl.
While still warm, add the pine nuts and the Gorgonzola.
Mix it with a fork and slightly crush the pieces of Gorgonzola while you are mixing.
Put the mixture in the refrigerator and serve cool with toast or fresh bread.
Tip: also tastes great when you add this mixture to your salads!
