Ham, Feta Cheese and Pineapple Verrines

Ingredients
- 100 gr. feta cheese 3.5 oz.
- 3 slices pineapple better fresh because canned is very sweet
- 100 gr. cooked ham 3.5 oz.
- 30 gr. pine nuts 1.1 oz.
- 1 TBSP mustard I prefer Dijon, but any will do as long as its not sweet
- 1 TBSP Balsamico vinegar
- 3-4 leaves rucola
- 3-4 leaves Fresh basil
- Extra virgin olive oil
- Salt
- Black Pepper

Instructions
- For this, you mix 2 Tbsp of olive oil with the balsamic vinegar and the mustard. Add a pinch of salt and some pepper.
- Roast the pine nuts for 2-3 minutes in a frying pan (without oil or fat) until they are golden brown.
- Cut the pineapple, ham, feta and basil into small pieces and mix them in a bowl.
- Add the roasted pine nuts (let them cool down a little first) and the vinaigrette.
- Serve in small glasses decorated with some rucola.
Recipe Notes
Tip: looking to change the taste completely? Use curry powder or ginger in the vinaigrette. You can also exchange the cooked ham for cured ham.
