Instructions
  1. Cut the paprika and remove all pits.
  2. Boil some water and cook the paprika pieces for 6-8 minutes, until the are soft.
  3. Remove the paprika from the water and put in a bowl.
  4. In a bowl with cold water, add the gelatine leaves and heat a couple of seconds in the microwave.
  5. Cut the onion into small pieces and add to the paprika.
  6. While using a (hand) blender, add goat cheese, gelatine and basil to the paprika and onion and mix until you have to a smooth mousse.
  7. Add salt and pepper according to taste.
  8. Put the mousse in 4 small glasses and let it cool off in the fridge for 2-3 hours.
  9. When you serve it, decorate the glass with a cherry tomato.
Recipe Notes

Tip: are you a big fan of goat cheese? Then use a stronger tasting variety. Be careful though, because the taste can get quite overwhelming!
