Pinchos from smoked Herring, Potato and Apple (Pincho de Arenque, Patata y Manzana)

Now here’s a combination you do not see every day: apple, potato and smoked herring!
The flavors complement each other perfectly and make for an excellent starter or hors d’oeuvre.
You can also serve them with a glass of you favorite bubbles, a nice Spanish Cava perfectly fits here.

Ingredients
- 200 gr. Smoked herring 7 oz.
- 2-3 Potatoes (depending on size)
- 2-3 Apples sweet (depending on size)
- 1 Red onion
- Dill
- Pickles
- 2-3 TBSP Mayonaise
- Black Pepper
- 1 Untreated lemon
- sugar
- Butter
- Toothpicks

Instructions
- Boil the potatoes and let them cool down.
- Once cool, cut them into round slices.
- Make sure they are smaller than the diameter of your apple rounds.
- Cut the apple into rounds.
- Sprinkle a little sugar onto both sides of the apple rounds and lightly fry them in a pan with some butter for s couple of minutes. Don’t overdo it or they will become too soft.
- Remove immediately once they start to brown and let them cool down.
- Cut the red onions into fine rings and put aside.
- Slice the pickle into fine slices and put aside.
- Cut the herring into bite size pieces, slightly smaller than the apple rounds.
- Take one slice of apple, and stack one piece of herring, followed by one slice of potato, followed by a bit of mayonnaise and some black pepper, followed by a piece of herring and a fine slice of pickle.
- Top the whole thing of with a small triangular shaped piece of lemon and 2-3 thin red onion rings.
- Stick a toothpick in the middle to hold everything in place.
- Decorate with some fresh dill.
