Pinchos with Shrimps, Bacon and Guacamole (Pinchos de Gambas y Beicon con Guacamole)

A surprising combination, but the bacon works great with the shrimp. Great on its own or accompanied with salad.

You can also use it as a dip with some bread sticks or nacho chips.

Enjoy with a nice red wine or a cold beer!

Instructions
  1. Fry the shrimps and the bacon in a pan with some olive oil and garlic.
  2. When done, remove and let them cool down.
  3. Make the guacamole (recipe here).
  4. Cut the bread into slices and apply a generous layer of guacamole.
  5. On top, add 1-2 shrimp, as well as some diced bacon, depending on the size.
  6. Garnish with half a cherry tomato and some coarsely ground black pepper.
