Pinchos with Shrimps, Bacon and Guacamole (Pinchos de Gambas y Beicon con Guacamole)
A surprising combination, but the bacon works great with the shrimp. Great on its own or accompanied with salad.
You can also use it as a dip with some bread sticks or nacho chips.
Enjoy with a nice red wine or a cold beer!

- 12 slices Crusty bread like baguette
- 12 Shrimps
- 100 gr. Diced bacom 7 oz.
- 2 cloves garlic
- 6 cherry tomatoes
- Black Pepper
- Extra virgin olive oil

Instructions
- Fry the shrimps and the bacon in a pan with some olive oil and garlic.
- When done, remove and let them cool down.
- Make the guacamole (recipe here).
- Cut the bread into slices and apply a generous layer of guacamole.
- On top, add 1-2 shrimp, as well as some diced bacon, depending on the size.
- Garnish with half a cherry tomato and some coarsely ground black pepper.
