Pintxo of Chiabatta with Cooked Ham, Cheese and Pickle (Chapatas con Jamon de York, Queso y Pepinillo)
Great starter, goes well with all types of meats and other dishes.
Try different cheeses or for a complete different take try cream cheese.
Enjoy with a glass of your favorite red wine.

- 1 loaf Chiabatta bread
- cooked ham
- Hard Cheese (like Manchego but you can use any other cheese if you wish)
- Pickle
- spring onion
- sieved tomatoes or tumaca
- Extra virgin olive oil
- Salt
- Black Pepper
- Toothpicks

Instructions
- Slice the pickle in half lengthwise.
- Cut the chiabatta in half and put spread a thin layer of sieved tomatoes (or tumaca) on the bottom half.
- Sprinkle some olive oil on the other half.
- Add some cooked ham and cheese to the bottom half.
- Cut the spring onion and sprinkle on top.
- Add some salt and pepper.
- Now add the pickle and put both halves together.
- Cut into bite size pieces and stick a toothpick in them to hold together.
Recipe Notes
Tip: you can use different cheeses, but don’t use cheese with a very strong flavour as it risks to overwhelm the flavour of the ham.
