Pintxos with Ham, Fried Paprika and Tumaca (Jamon con Picadillo de Piementos Fritos y Tumaca)
Another Spanish classic. If you don’t have tumaca, you can use sieved tomatoes instead.
When served with an omelette, the fried paprika also works great for breakfast!

Ingredients
- 8 slices jamon Spanish ham
- 8 slices Crusty bread like baguette
- 1 red paprika
- 1 green paprika
- 2 cloves garlic
- 2 tomatoes
- Tumaca see recipe here
- Extra virgine olive oil
- Oregano
- Salt
- Black Pepper
- Toothpicks

Instructions
- Dice the red and green paprika and lightly fry them in a pan with some olive oil.
- Slice the garlic and add to the pan.
- After a couple of minutes, dice the tomatoes and add them a well.
- Season with salt, pepper and oregano.
- Once all is done, remove and let it cool.
- Take some slices of baguette and spread tumaca on them.
- Put a thick layer of fried vegetables on top.
- Make rolls of the jamon and skewer one roll of jamon onto a toothpick which you then stick into the bread.
