Pintxos with Ham, Fried Paprika and Tumaca (Jamon con Picadillo de Piementos Fritos y Tumaca)

Another Spanish classic. If you don’t have tumaca, you can use sieved tomatoes instead.

When served with an omelette, the fried paprika also works great for breakfast!

Instructions
  1. Dice the red and green paprika and lightly fry them in a pan with some olive oil.
  2. Slice the garlic and add to the pan.
  3. After a couple of minutes, dice the tomatoes and add them a well.
  4. Season with salt, pepper and oregano.
  5. Once all is done, remove and let it cool.
  6. Take some slices of baguette and spread tumaca on them.
  7. Put a thick layer of fried vegetables on top.
  8. Make rolls of the jamon and skewer one roll of jamon onto a toothpick which you then stick into the bread.
