Salsa Brava
A staple of Spanish cuisine. Is used as a base for many different recipes.

Ingredients
- 2 carrots
- 1 cup sieved tomatoes
- 1 large onion
- 3-4 cloves garlic
- 1 red paprika
- Tabasco or fresh chillies whatever you prefer
- Extra virgin olive oil
- Salt

Instructions
- Peel and cook the carrots.
- Slice the onions and the garlic and fry them lightly in some olive oil. Be careful to to burn them!
- After a couple of minutes, add the sieved tomatoes, cut the paprika in slices and add also.
- Once the carrots are cooked, cut them into slices and add them to the rest together with some salt.
- Let everything simmer for 5 minutes.
- Remove and let it cool down for a couple of minutes.
- When its no longer boiling hot, blend everything using a blender or handblender.
- While doing so, add tabasco and/or chillies according to taste.
Recipe Notes
Tip: This is the famous sauce that you is used in patatas bravas. You can also use it for anything else you want to spice up, like hardboiled eggs or meat.
