Scallop Brochettes

Instructions
- Heat some olive oil in a pan and lightly bake the scallops until golden brown on both sides. Be careful: this usually only takes a couple of minutes for each side.
- Cut the parsley and mix it with 3 Tbsp of olive oil.
- Skewer 2 scallops per person and sprinkle them with the parsley/oil mixture.
- Add some black pepper and sea salt according to taste/.
Recipe Notes
Tip: you can also serve the scallops as a starter. Just don’t skewer them put serve them on a plate. Count 3 scallops per person and serve with some light pesto and pine nuts.
