Shrimp Salad (Ensalada de Gambas)

Great little shrimp salad. The combination of paprika and shrimp works really well.

The shallots and balsamic vinegar add a really nice zingy flavor to the dish.

Serve with a glass of your favorite white wine.

Instructions
  1. Cook the shrimps and peel them. (Not necessary if you bought them cooked).
  2. If you want, you can leave the tail for presentation purposes.
  3. Cut the paprikas into pieces and put in a bowl.
  4. Cut the shallots into rings and add to the paprika.
  5. Now, add the shrimps, some olive oil, balsamic vinegar, salt and pepper.
  6. Mix everything with a wooden spoon or by hand.
  7. Cut the lettuce into strips.
  8. On a plate make a bed of lettuce strips.
  9. Put the shrimp/paprika mix form the bowl on the bed of lettuce.
