Shrimp Salad (Ensalada de Gambas)
Great little shrimp salad. The combination of paprika and shrimp works really well.
The shallots and balsamic vinegar add a really nice zingy flavor to the dish.
Serve with a glass of your favorite white wine.

Ingredients
- 12-16 Shrimps (depending on size)
- 2 Paprika any color you like
- 2 shallots
- 1 Lettuce
- Balsamic vinegar
- Extra virgin olive oil
- Salt
- Black Pepper

Instructions
- Cook the shrimps and peel them. (Not necessary if you bought them cooked).
- If you want, you can leave the tail for presentation purposes.
- Cut the paprikas into pieces and put in a bowl.
- Cut the shallots into rings and add to the paprika.
- Now, add the shrimps, some olive oil, balsamic vinegar, salt and pepper.
- Mix everything with a wooden spoon or by hand.
- Cut the lettuce into strips.
- On a plate make a bed of lettuce strips.
- Put the shrimp/paprika mix form the bowl on the bed of lettuce.
