Stuffed Fish Rolls (Rollitos de Pescado Rellenos)
Surprisingly, this is very popular with kids! The fish rolls are a great snack and easy to make.
For a more refreshing touch, you can also use raw paprika or replace them with cucumber.

Ingredients
- 2-3 White fish fillets with firm meat (like catfish, tilapia, halibut, etc.)
- 6-8 cherry tomatoes
- 1 red paprika
- 1 green paprika
- Salt
- Black Pepper
- Extra virgin olive oil
- Vinegar
- Toothpicks

Instructions
- Boil the fish fillets in boiling water for about 3-5 minutes (depending on the type and thickness).
- Once cooked, remove and let it cool.
- Cut the paprika into thin slices.
- Lightly fry them in a pan with olive oil until they are soft.
- Remove and let cool.
- When everything has cooled down, take the fish and cut into strips.
- Put the vegetables on the strips and roll them.
- Use a toothpick to hold everything together.
- Sprinkle with some olive oil, vinegar, salt and black pepper.
