Tarama or Taramosalata
While not really Spanish, I have come across this and various variations in several Tapas restaurants and bars in recent years.

Instructions
  1. Remove the crust from the bread and cut into small pieces.
  2. In a bowl, add the bread, fish roe, creme fraiche and the juice of the lemon.
  3. Blend everything until you have a smooth, even mixture.
  4. Leave to cool in the fridge for 1 hour and remove just before serving.
Recipe Notes

Tip: if you make it the day before and leave it in the fridge over night, the flavor will be more intense!
