A surprising take on the classic omelette. A real eye-catcher that surely will be the talk of the party!

Great for kids, they love the little tortillas! Also tastes good without the shrimps.

  1. With each egg, prepare a small, very fine french omelette.
  2. When done, remove from the pan and let it cool down.
  3. Season with with salt and pepper.
  4. Dice the garlic and fry the shrimps with the garlic and some olive oil.
  5. Dice the avocado and the onion into small pieces, season with some oil, salt and pepper, and put aside
  6. Place the small omelettes on a flat surface.
  7. Top them with some fried shrimp and the diced avocado/onion mix.
  8. Serve with a slice of lemon on top.
Recipe Notes

Tip: if you cannot make small omelettes, just make one large one, cut it into small pieces and serve these pieces on bread.
