Ingredients
- 8 Shrimps
- 2 cloves garlic
- 4 Eggs
- 1-2 Avocado (depending on size)
- 1 Red onion
- Extra virgin olive oil
- Salt
- Black Pepper
- 1 lemon

Instructions
- With each egg, prepare a small, very fine french omelette.
- When done, remove from the pan and let it cool down.
- Season with with salt and pepper.
- Dice the garlic and fry the shrimps with the garlic and some olive oil.
- Dice the avocado and the onion into small pieces, season with some oil, salt and pepper, and put aside
- Place the small omelettes on a flat surface.
- Top them with some fried shrimp and the diced avocado/onion mix.
- Serve with a slice of lemon on top.
Recipe Notes
Tip: if you cannot make small omelettes, just make one large one, cut it into small pieces and serve these pieces on bread.
