A staple of Spanish cuisine. Is used in many different dishes as well as a basic spread on sandwiches.
Using a garlic press (garlic crusher), press the cloves into a bowl.
Grate the tomatoes and add to the garlic.
The skins of the tomatoes are not used and can be discarded.
Mix everything with a spoon and add some salt.
Some people like to add a hint of vinegar and/or olive oil, but this is completely up to you.
Tip: Tumaca is used in Spain as a base on breads of jamon. Its basically a spread that gives a nice flavour and brings out the other ingredients that are served on the bread, like ham, chesse, saussage, etc.
