  1. Using a garlic press (garlic crusher), press the cloves into a bowl.
  2. Grate the tomatoes and add to the garlic.
  3. The skins of the tomatoes are not used and can be discarded.
  4. Mix everything with a spoon and add some salt.
  5. Some people like to add a hint of vinegar and/or olive oil, but this is completely up to you.

Tip: Tumaca is used in Spain as a base on breads of jamon. Its basically a spread that gives a nice flavour and brings out the other ingredients that are served on the bread, like ham, chesse, saussage, etc.
